Emma E. Biberstine
Emma completed her bachelor’s degree in Nutrition and Human Sciences at the University of Texas A&M-Kingsville. Emma then finished her dietetic internship through the WIC Program, where she worked as a nutritionist; she is bilingual and has practiced nutrition counseling for eight years with the WIC Program.
Her love for nutrition stems from her love of food. Knowing that healthy food can help prevent and manage illnesses drives her to spread the word about making healthy food changes. Emma’s experience working at the WIC program has made her an advocate for breastfeeding and healthy eating for children and women, pre- and post-partum. She has been a vegetarian for eight years and loves that Nutrition as Therapy helps promote plant-based meals.
In her spare time, she loves to cook healthy vegetarian meals for her family and spend quality time with her two children and husband. Her favorite meal/snack is nopalitos salad and tostadas with avocado.
