Hi, I’m Basia Huicochea, a passionate Nutritionist originally from Mexico. I earned my degree in Nutrition and became a Certified Diabetes Educator in Mexico, where I discovered my calling—helping people create healthier lives without giving up the foods and traditions they love. At Nutrition As Therapy, I specialize in weight management, cardiovascular health, Type II diabetes, and mixed hyperlipidemias. I take great pride in guiding patients to make meaningful changes that honor their culture while supporting their health goals. When I’m not working with clients, I enjoy hiking and exploring the outdoors with my mountain biking group—adventures that fuel both my body and spirit!

Hi, I’m Blanca Contreras, a Registered Dietitian originally from Mexico. I earned my bachelor’s degree in Nutritional Science from California State University, Los Angeles, and completed my dietetic internship at New York's Distance Dietetic Internship. I also hold a Lactation Educator Counselor Certificate. I have extensive experience in nutrition education, counseling, and breastfeeding support. At Nutrition As Therapy, I provide personalized nutrition counseling to a diverse population, specializing in Type I and Type II diabetes, pediatrics, gastrointestinal diseases, cardiovascular health, hyperlipidemia, and weight loss. In my free time, I love being outdoors—whether it’s hiking, traveling, or simply enjoying the latest nutrition research. I also enjoy cooking plant-based recipes. My favorite snack is a mix of hummus, strawberries, and dark chocolate!

Passionate about the transformative benefits of nutrition, Dylan focuses particularly on mitigating chronic diseases, with a special emphasis on diabetes and heart disease. Dylan specializes in whole foods plant-based nutrition, advocating for the remarkable advantages of fiber and its positive impact on the microbiome to alleviate various chronic conditions. Beyond his professional pursuits, Dylan is a competitive CrossFit athlete, bringing an athletic perspective to his holistic approach to health. With over 15 years of culinary expertise, he crafts delicious meals, reflecting his commitment to merging taste with nutritional value. Hello, I am Katherine Brackin, a Registered and Licensed Dietitian Nutritionist. I have had the privilege of working with both pediatric and geriatric patients, with a focus on pediatric obesity and long-term care. It has been an honor to serve my community by teaching yoga, volunteering at the local farmers market, and composting food scraps at a community garden. I am deeply passionate about the idea that developing wellness—whether physical, mental, spiritual, or otherwise—is an opportunity for personal growth and collective evolution. My approach is client-centered, with an emphasis on the health and environmental benefits of a plant-based lifestyle.

Outside of work, I dedicate my time to volunteering at an animal sanctuary each week, driven by my love for animals and my commitment to giving back to causes close to my heart.

Originally from Mexico, I’ve worked in both hospital and private practice settings, helping patients navigate everything from bariatric care to chronic conditions like diabetes. My journey led me to Chicago, where I earned my Master’s in Nutrition, deepening my clinical expertise and cultural perspective. I live with my husband and our lovable coonhound, Martina. I understand what it means to adapt to new lifestyles, and I bring both professional knowledge and personal empathy to every session. When I’m not working, you’ll find me hiking, exploring cozy coffee shops, or getting lost in a good novel.

Whether in one-on-one sessions or family settings, I believe food is far more than fuel — it’s a powerful tool for healing, bonding, and transformation. Outside of my work, you can find me running, biking, or experimenting in the kitchen with a new recipe.

Hi, my name is Ross Shumway, and I’m a Registered Dietitian Nutritionist with a passion for helping individuals achieve their health goals through evidence-based nutrition strategies. Currently, I serve as a Performance Dietitian for the US Air Force, where I provide nutrition care to servicemen and women and conduct research on how diet impacts G-force tolerance and eye health. I previously served as the Director of Football Performance Nutrition at UCLA, where I built the university’s first football nutrition program. I have experience working with professional and collegiate football teams, including the Los Angeles Chargers, UCLA Athletics, and the Los Angeles Rams, focusing on performance nutrition. At Nutrition As Therapy, I work with patients to help them reach their body composition goals and teach them how to unlock the benefits of a nutritious diet. I hold a Bachelor of Science in Kinesiology from Chapman University and am currently pursuing a master’s in nutrition sciences at Eastern Illinois University to expand my expertise further. When I’m not working, I love hiking in the White Tanks Mountain Range outdoors with my wife and our American Bulldog. My favorite plant-based meal is Buddha Bowls, and I’m always exploring new ways to integrate nutrition into my life. With a results-driven approach and a commitment to excellence, I’m here to help you reach your peak potential through science-based nutrition strategies.

He has 23+ years of experience in project management, logistics, and executive leadership. Ernesto specializes in supply chain optimization, risk management, and corporate finance. He has led international logistics operations and earned recognition for his leadership and collaboration skills. His major focus in his roles has been developing practical strategies and ensuring seamless operations. "As Office Manager at Nutrition As Therapy, I have had the pleasure of working with cohesive and coherent teams that understand their contributions to the company's mission and the significance of our work in impacting our patients' lives. I'm thrilled to be part of the Nutrition As Therapy team, as I've been able to leverage my experience and have received tremendous support and openness from Upper Management. In my free time, I enjoy outdoor activities such as hiking, cycling, and simply spending time in nature. I'm also a big fan of plant-based cuisine, particularly dishes made with lentils such as lentil burgers!”

With a degree in Industrial Engineering and an MBA, she brings over 25 years of experience in process improvement and systems implementation, first in the banking industry and now in healthcare. Her career has been shaped by a deep passion for personal growth, continuous learning, and developing new abilities. Transitioning into the health industry has allowed her to expand her expertise in data analysis and insurance, opening new avenues for professional growth. Beyond the numbers, Fabiana enjoys exploring the world, whether traveling to new destinations, relaxing on the beach, hiking in the mountains, or wandering through vibrant cities. And when it comes to plant-based meals, her favorite is a comforting plate of black bean and sweet potato enchiladas.

With a degree in Gastronomy and over six years of experience in customer service and management, she brings a unique blend of technical skill and human connection to her role. Rubi is highly proficient in multiple CRMs and tech tools, helping streamline workflows and enhance team performance. She also holds various diplomas in leadership, management, and customer service. She leads with empathy, clarity, and a commitment to continuous improvement. Rubi believes that great leadership starts with listening and empowering others to shine. What truly sets Rubi apart is her deep appreciation for her work. She feels incredibly grateful to be part of a mission-driven team that is passionate about making a difference in people’s lives. Outside of work, Rubi enjoys movies, swimming, traveling, and personal growth. She’s also a foodie at heart—her favorite fruit is watermelon, and she loves preparing plant-based enchiladas with spinach, tofu, tomatoes, onions, garlic, green chilis, and a creamy avocado sauce.

She has held leadership roles, including Team Lead, and has extensive experience in customer service and office management, making her a valuable asset in any healthcare setting. Known for her attention to detail and dedication to excellence, Erica ensures accuracy and efficiency in all billing processes. Outside of work, she enjoys traveling, spending quality time with her family, and relaxing at the beach—activities that reflect her vibrant and balanced approach to life.

María Paula serves as the Back Office Lead at Nutrition As Therapy, where she combines her passion for leadership and teamwork with her commitment to excellence. With a bachelor's degree in Political Sciences and a strong background in administrative assistance, project management, and strategic planning, María Paula plays a vital role in ensuring smooth operations and high-quality standards. She deeply values the opportunity to work at Nutrition As Therapy. Leading a dedicated team, María Paula takes pride in fostering an inclusive and comfortable working environment where everyone feels supported and empowered to perform their best. Acting as a key point of contact for Appointment Setters, she ensures seamless communication and contributes to the overall success of the organization. Beyond her professional life, María Paula is passionate about gender equality, environmental sustainability, and promoting access to healthy lifestyles. In her free time, she enjoys reading Latin American novels and dancing. María Paula´s favorite plant based meal is butternut squash soup!

Michelle Romero is the Billing Advisor for Nutrition As Therapy and communicates the daily workflow processes of administrative tasks. Following her thorough comprehension of health insurance policies, this enables her to elaborate coherently on her degrees in medical Office Administration processes and AA Liberal Arts: Social Behavioral Sciences of Arts and Humanities. Michelle’s skills prove her abilities obtained with experience from other healthcare providers, as she obtained her first medical billing job at the age of 21. She has been the billing specialist for home medical supplies, durable medical equipment, and ambulance billing and has worked as claims specialist for nutrition as well, along with her current job role. Her overall experience with insurance billing covers abroad 20 years and this process has encouraged her to explore more areas of the insurance field. Michelle is highly appreciative of her job field of interest along with receiving special recognitions and sharing her knowledge further as the end result. She is currently pursuing her major Public Administration: Health Services concentration. Outside office hours, Michelle enjoys spending time with her family. Additionally Michelle is part of the local district school board and occasionally serves for assignments in the after school program guiding the students and assist with the daily homework along with supervisión of outdoor activities. Attending her home church is important to emphasize her faith and Michelle knows the value her profound belief as she is a provider, mom of 3 and a homemaker and it is important for her to continue being a positive example to her family and others around her.
