Maple Oat Pancakes

Servings: 10-12 pancakes
Portion Size: ~1 pancake per serving (about 4 inches in diameter)
Ingredients
1 pack (16 oz) silken tofu
2½ cups rolled oats
2 tsp baking powder
¼ tsp salt
⅓–½ cup plant milk (like almond or soy)
3 tbsp maple syrup
2 tsp vanilla
Directions
Blend it up
Put tofu, ⅓ cup milk, maple syrup, vanilla, oats, baking powder, and salt in a blender. Blend until smooth.
Check thickness
If it looks too thick, add a little more milk. You want it thick but pourable (like regular pancake batter).
Cook
Heat a non-stick pan with a little oil.
Pour about ¼–⅓ cup batter per pancake.
Cook 3–4 minutes per side.
Flip when you see bubbles and the bottom is golden.
Adjust between batches
The batter thickens as it sits. Add 1–2 tbsp plant milk, stir, and keep going.
Serve & enjoy
Great with berries, almond butter, and a little extra maple syrup or date syrup.
