Ingredients
½ cup old-fashioned rolled oats
1 cup unsweetened soy milk
4 tbsp hemp hearts
¼ cup walnuts, chopped
1 tbsp natural peanut butter or almond butter
1 tbsp chia seeds
⅛ cup banana, sliced
¼ cup dried blueberries
¼ tsp cinnamon
Directions
Cook the oats.Combine the oats and soy milk in a small saucepan over medium heat. Stir frequently and cook until thick and creamy, about 5 minutes.
Add seeds and nut butter.Remove from heat. Stir in the chia seeds, peanut butter or almond butter, and cinnamon until fully combined.
Finish and serve.Pour into a bowl and top with hemp hearts, walnuts, banana slices, and dried blueberries. Serve immediately. Add water or more milk if you prefer a creamier consistency.
Optional:
For an overnight version, soak the oats in soy milk in the refrigerator overnight and add toppings in the morning.
